- 1 cup (150g) cornmeal
- 1 cup (120g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup (240ml) buttermilk
- 1/4 cup (60ml) vegetable oil
- 2 large eggs
- 1 cup (150g) corn kernels (fresh, canned, or frozen)
- Optional: 1 jalapeño pepper, seeded and finely chopped
- Optional: 1/4 cup (60g) shredded cheddar cheese
- Optional: 2 tablespoons chopped fresh cilantro
- Preheat your oven to 375°F (190°C). Grease a 9-inch square baking dish or line it with parchment paper.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the buttermilk, vegetable oil, and eggs until well combined.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the corn kernels, jalapeño pepper (if using), shredded cheddar cheese (if using), and chopped cilantro (if using).
- Pour the batter into the prepared baking dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until the cornbread is golden brown on top and a toothpick inserted into the center comes out clean.
- Remove the cornbread from the oven and let it cool for a few minutes before slicing and serving.
- Serve the cornbread warm as a side dish or snack. It pairs well with chili, soups, stews, or can be enjoyed on its own.
